Red White Blue Ice Cubes (Printable Version)

Layer blueberries, coconut and strawberries in trays with juices to create colorful patriotic ice cubes.

# Ingredient List:

01 - 1/2 cup fresh or frozen blueberries
02 - 1/2 cup strawberries, hulled and chopped
03 - 1/2 cup fresh coconut meat or unsweetened shredded coconut

→ Liquids

04 - 1 cup coconut water
05 - 1 cup natural blueberry juice
06 - 1 cup natural strawberry juice or cranberry juice

# Directions:

01 - Wash blueberries and strawberries thoroughly. Hull and chop strawberries into small pieces. If using fresh coconut, chop into small, uniform pieces.
02 - Fill the bottom third of each ice cube compartment with blueberries. Add enough blueberry juice to just cover the fruit. Place ice cube tray in freezer for approximately 1 hour, or until solid.
03 - Once the blue layer is frozen, add a layer of fresh coconut meat or a sprinkle of shredded coconut to each compartment. Pour coconut water over the coconut to fill the second third. Return to freezer for an additional hour, or until firm.
04 - After the white layer has set, top each compartment with chopped strawberries. Fill to the top with strawberry juice or cranberry juice. Freeze until completely solid, about 2 hours.
05 - Remove the ice cubes from the tray. Use immediately to chill lemonade, sparkling water, or cocktails for a festive presentation.
