01 - In a medium mixing bowl, whisk together olive oil, lemon juice, minced garlic, chopped parsley, smoked paprika, salt, pepper, and red pepper flakes until well combined.
02 - Add shrimp to the marinade and toss thoroughly to coat. Cover and refrigerate for 15 to 30 minutes. Do not marinate longer to maintain proper shrimp texture.
03 - Preheat grill or grill pan over medium-high heat.
04 - Thread marinated shrimp onto skewers for easy handling. If using wooden skewers, soak them in water for at least 20 minutes beforehand.
