Crunchy, spicy roasted chickpeas with bold Cajun flavors perfect for snacking or salads.

# Ingredient List:

→ Chickpeas

01 - 2 cans (15 oz each) chickpeas, drained and rinsed (or 3 cups cooked chickpeas)

→ Spices & Seasonings

02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried thyme
08 - 1 teaspoon cayenne pepper (adjust to heat preference)
09 - 1 teaspoon ground black pepper
10 - 1 teaspoon fine sea salt

# Directions:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the chickpeas very dry with paper towels. Remove any loose skins for extra crispiness.
03 - In a large bowl, toss chickpeas with olive oil until evenly coated.
04 - Add smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt. Toss well to coat all chickpeas with seasoning.
05 - Spread chickpeas in a single layer on the prepared baking sheet.
06 - Roast for 35-40 minutes, shaking the pan halfway through, until chickpeas are golden and crispy.
07 - Let cool for 10 minutes before serving (they crisp further as they cool).

# Expert Tips:

01 -
  • They satisfy that crunchy snack craving without any of the guilt
  • The spice blend hits every corner of your mouth and keeps you reaching for just one more
02 -
  • Damp chickpeas will never get crispy no matter how long you roast them
  • They might still feel slightly soft right out of the oven but they crisp up considerably as they cool
03 -
  • Use fresh spices because old garlic powder makes everything taste dusty
  • Remove more skins than you think necessary for the crunchiest results
