01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a large bowl, combine diced salmon, egg, chives, dill, shallot, and lemon zest.
03 - Add breadcrumbs, mayonnaise, Dijon mustard, salt, and pepper. Mix gently until just combined.
04 - Using damp hands, form the mixture into 20 small balls (about 1 heaping tablespoon each) and place them on the prepared baking sheet.
05 - Bake for 12–15 minutes, until the bites are golden and cooked through.
06 - Let cool slightly before serving. Serve warm or at room temperature with lemon wedges and your choice of dip.
